Spiked Basil Lemonade

Note: This recipe requires 6 to 10 hours of prep and makes 2 cocktails.  The first two ingredients can be prepped in larger amounts if more cocktails are desired.

Ingredients

  • 8-10 large basil leaves
  • 4 oz vodka
  • 1/4 cup granulated sugar
  • 1 cup lemonade
  • 1/4 oz Simple syrup
  • Garnish: lemon wheel

Instructions

  1. Add half of the basil leaves and the vodka to a container or mason jar and store for 6-10 hours to infuse the vodka with the basil essence.
  2. When the vodka is ready, blend the remaining number of basil leaves with the 1/4 cup of sugar. Stop blending when the basil pieces are all roughly the same size.  The sugar will start to take on a green color.
  3. Strain the vodka into a glass measuring cup. Be sure to squeeze all the vodka out of the leaves.
  4. Rim the two glasses with the basil sugar combination by placing the basil sugar on a plate or a cocktail rimmer which can be used for both the dry and wet elements. If you don't have one of those you can wet the edge of the glass by dipping the glass into water.
  5. Fill two highball glasses with ice then divide the vodka evenly between them.
  6. Top off with about 1/2 cup of lemonade each, garnish and enjoy!
