Mojito (Mint-Cucumber)


Ingredients

  • 2 oz White Cuban Rum
  • 3/4 oz fresh lime juice
  • 6 cucumber slices
  • 10 mint leaves
  • 1 1/2 - 2 teaspoons white or coconut sugar
  • Club Soda
  • Garnish: none

Instructions 

  1. Muddle the mint leaves, cucumber, sugar, and lime juice in the bottom of a cocktail shaker.
  2. Add rum and ice to the shaker and shake vigorously.
  3. Strain into a Highball or Collins glass filled with ice and cucumber slices.
  4. Top with Club soda. 
  5. Garnish with mint sprig.

Note: Do not over-muddle the mint leaves so they break into tiny pieces, just enough to release the fragrance, etc.
