Mojito (Mint-Cucumber)
Ingredients
- 2 oz White Cuban Rum
- 3/4 oz fresh lime juice
- 6 cucumber slices
- 10 mint leaves
- 1 1/2 - 2 teaspoons white or coconut sugar
- Club Soda
- Garnish: none
Instructions
- Muddle the mint leaves, cucumber, sugar, and lime juice in the bottom of a cocktail shaker.
- Add rum and ice to the shaker and shake vigorously.
- Strain into a Highball or Collins glass filled with ice and cucumber slices.
- Top with Club soda.
- Garnish with mint sprig.
Note: Do not over-muddle the mint leaves so they break into tiny pieces, just enough to release the fragrance, etc.
