Jack Frosty

 

 

Ingredients

  • 2 oz rum or vodka
  • 2 oz blue Curacao
  • 2 oz cream of coconut
  • 4 oz pineapple juice
  • 2 cups of ice
  • Garnish: simple syrup, coconut (shredded)

Instructions 

  1. Chill a coup or stemless wine glass for 10-15 minutes. 
  2. In a blender, combine the ice, rum or vodka, blue Curacao, cream of coconut (not coconut cream) and pineapple juice.  
  3. Trace the rim of the glass with simple syrup. 
  4. Add shredded coconut to a shallow pan or plate.
  5. Coat the rim of the glass with coconut as you would do with rimming salt.
  6. Pour into glasses, being careful not to disturb the garnish.
