Lemon Blueberry Daiquiri

Ingredients (Blueberry-lemon syrup)

  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 cup fresh blueberries
  • Zest of 1 lemon

Ingredients (drink)

  • 2 oz light rum
  • 1 oz fresh lemon juice
  • 3/4 oz simple syrup
  • Garnish: fresh blueberries

Instructions

  1. Combine sugar and water in a small sauce pan and heat until sugar is dissolved.
  2. Add blueberries and bring to a boil until the blueberries breakdown (5-8 min)
  3. Remove from heat and stir in lemon zest. Let cool for several minutes. 
  4. Strain into a clean cup or jar and give it time to fully cool.
  5. Fill a shaker with rum, lemon juice, simple syrup, and add ice then shake.
  6. Strain into a chilled coupe and serve garnished with blueberries and lemon peel on a cocktail pick.
