Lemon Blueberry Daiquiri
Ingredients (Blueberry-lemon syrup)
- 1/2 cup water
- 1/2 cup granulated sugar
- 1 cup fresh blueberries
- Zest of 1 lemon
Ingredients (drink)
- 2 oz light rum
- 1 oz fresh lemon juice
- 3/4 oz simple syrup
- Garnish: fresh blueberries
Instructions
- Combine sugar and water in a small sauce pan and heat until sugar is dissolved.
- Add blueberries and bring to a boil until the blueberries breakdown (5-8 min)
- Remove from heat and stir in lemon zest. Let cool for several minutes.
- Strain into a clean cup or jar and give it time to fully cool.
- Fill a shaker with rum, lemon juice, simple syrup, and add ice then shake.
- Strain into a chilled coupe and serve garnished with blueberries and lemon peel on a cocktail pick.
